It's a cold and damp winter evening. You want something to sip by the fire that isn't too dry and isn't too sweet- a perfect balance to warm you from the inside out. Conversely, it's summer. You want something just the right amount of sweet and refreshingly chilled as you recline in the warm breeze. A mead for all seasons.
This is how I feel about Solas Honey Wine from Sky River Meadery in Woodinville. It's the most tasty mead I've ever had. It's the perfect amount of sweetness, and I'm not using the term "perfect" loosely here. If you're like me and find the typical sugar content of a dessert wine a bit much yet enjoy that light sweetness of a late harvest, then Solas will be right up your alley. What really makes it incredible is that it's aged in Dry Fly Whiskey barrels. So the finish is the smoothest subtlest hint of whiskey flavor leaving you craving sip after sip.
